Credit to a bro here who intro me to this Char Kway Teow stall at Hong Lim Food Centre. Even though the queue looks intimidating, but actually its quite fast and efficient. Was looking at this chio office girl in front and one turn eye, my turn already.I took a peek at the uncle frying the kway teow in the kitchen and I know when this stall so famous liao.

Firstly, the way he fry the kway teow has a fixed systematic rythm. It goes from 90 degrees to the left with a cross-eight motion. As i got drawn into his hypnotic masterful strokes, I realised to my horror that it is very the legendary Du Gu Jiu Jian swordstance. No wonder the kway teow is fried till it is slight crisp at the sides with the sweet soya sauce and pork lard evenly coated throughout.

The wok hei fragrance is definitely there. And you can taste in it every single noodle and kway teow. It is also not too overpowering sweet and the cockles are fresh. Best is he put a generous amount of crispy, juicy pork lard. These little bastards are the catalysts which not only elevates the overall flavour of the dish but your blood level. However we only live once.

Its really a good try. Keeping in mind nowadays frid kway teow is made lazy by many. Throw noodle, stir 3 seconds, pour dark soup, stir 2 seconds, serve. This stall shows how it is properly done.
